On Flour

Flour: a staple ingredient in every baker's cabinet. Originally derived from the word 'flower' or as they say in french, 'fleur', its suppose to mean 'the finest', and quite rightly so. After all, its soft, powdery and silky smooth to the touch. Sounds lovely doesn't it? Yea well just wait until you spill it onto the floor.

But anyway, moving on... The most common type of flour is wheat flour, but even then there are different types and varieties. To make things simple, lets break it down into two groups: those high in gluten content and those low in gluten content. Gluten simply refers to the toughness or elasticity of the flour. Its what gives your baked goods its shape, volume and structure. Of course there are alternatives to using flour but the results rarely ever turn out the same. There are also recipies out there that don't need flour at all so do check em' out (e.g. See Flourless Chocolate Cake - looks good ain't it? Been wanting to make that for a while now!).

So the most common type of flour is all purpose flour (aka plain flour). You can easily get it at any supermarket and in some cases, your local ma ma stall. It has an average gluten content of around 9% to12% which makes it very, very versatile and will easily fulfill most household baking needs. Its usually combined with baking powder or baking soda (see pictures below) - leavening agents that serve to further 'lift' up the texture and volume of the final product during baking. Personally, I always make it a point to have an extra bag around the house.
 
Self-rising flour is basically all-purpose flour with added salt and baking powder. I call it the 'lazy' flour because you don't need to sift in any extra leavening agents and its good for busy bakers (like me). You can easily make your own self-raising flour as well. Simply mix 1 cup all-purpose flour with 1 1/4 teaspoon baking powder and a pinch of salt. An important point to note is that store-bought self-raising flour will lose its leavening properties if left out in the open too long so try to use it up ASAP once opened yea?

Bread flour on the other hand is a high protein flour made from hard wheat. It has a very high gluten content, between 10% and 13%, making it excellent for products that require more texture and 'mouthfeel' (i.e. chewiness). As the name goes, it is commonly used for making breads, buns or even cookies (think soft, chewy cookies. Mmmm....). Personally I haven't had much experience using it but I will update you guys in the future on this.

Finally, Cake flour is a finely milled white flour made from soft wheat. It has very low gluten content, between 8% and 10%, making it suitable for delicate cakes and cookies (e.g. Chiffon cakes). To make your own cake flour, simply mix 3/4 cup (84 grams) sifted and bleached all-purpose flour plus 2 tablespoons of (15 grams) cornstarch for every cup of cake flour. But honestly? Just save yourself the hassle and go get a bag. Its usually around the same price as all-purpose flour anyway so why make life difficult? ;)

There are many other different types of flours out there but I normally use these four. Another point to note is to store your flour in a cool, dry place. I can't emphasize enough on that point. The moment flour comes into contact with moisture, it will glutenize and become all rubbery and sticky (i.e. its spoilt). So please store your flour properly. Like in a dark cabinet away from sunlight. Or in your fridge. You can even store it in the freezer... buts lets not get too extreme now yea?

To end of, please do make it a point to always sift your flour before folding it into any batter. Sifting helps to remove unsightly lumps and ensures a smoother consistency of the batter. The same goes with any sort of powdery ingredient that you are planning on adding (e.g. cocoa powder). If your making cookies, its okay to be a bum once in a while. But if you're planning on making any sort of cake, sift, sift sift! And c'mon, its not take difficult. Use either an old-fashioned sifter, or shake the flour through a sieve. Trust me when I say that it makes a hell of a difference to the final outcome and texture of your cake.

So thats flour for you. (Can you believe that this has been the longest post I've written so far. On flour nonetheless. Jeez...)

She talks to her audience and she lets us in on her life which keeps me hooked to watching her. And i love that she's very frequent with her posts! Shows that her viewers really matter to her. She has about 15,600 subscribers and i'm really a loyal fan. She's now a freelance make up artist in the UK and she was trained by Sam and Nic from pixiwoo (will talk about them too). WATCH HER. She's fantastic.

She really knows her stuff. She's got about 171,600 subscribers and i totally understand why. She's a make up artist in the US and she's been around YouTube since August 2008. She's actually the first make up artist i got hooked to watching. She has skin type close to mine and to be honest, i believe her and i do buy a lot of the products that she recommends and i have yet to be disappointed. She's a NC25 and she has oily skin so it's relatively similar to my skin which is good cause then i know what kinda colours and products i could try on my skin. She's really fun to watch and she has a good sense of humour! I say she's a definite watch! She's great for people who are new to make up and also for those who already know a lot! She caters to a wide audience and she's really lively! I love watching her too. And she's got really great ideas! DEFINITE WATCH.

I love her story :) I love that she was the type of girl who really didn't think highly about herself but made it and now is one of the most famous YouTube bred make up artists around! She has about 350,000 subscribers now and its great to see her hard work pay off. She's got 2 books out and you can get it from Borders, on her website or at any great bookstore! The only issue i have with her videos now is that she uses a lot of her own products and does not really mention what products they are (because of course she does not want to flaunt herself too much because its still a make up channel that should cater to all). She used to use lots of great products and i would just love to see her branch out her products a little more. I have not tried her products yet so i have no say on them but when i do i will let you guys know how it is! Of course she's a good one to watch. And i think she's very easy to relate to because she portrays herself as an average person who's in love with make up and who wants to feel good about herself. I think a lot of people can identify with her and she's a joy to watch :)

I think she's 16 and she's great fun to watch! She's a student in the US. She's not a trained make up artist but i think she loves what she does enough to really research and become good at it. Her sister Elle (http://www.youtube.com/allthatglitters21) also has a channel and they both run the glitzy glam shop (that ships internationally) which has super pretty pink shimmery glittery (can hurt your eyes from looking at it too much, ok just kidding) stuff. Haha. But they do have some really pretty stuff! She's gaining credibility as a make up guru in the US and recently did an interview with Good Morning America! I love watching her cause she's really fun and she's really just a young teen who is in love with make up and who just really wants to talk about it and share it with everyone, which i think is missing in a lot of other make up channels!

She's really pretty! Haha. Ok i love watching her random videos as much as her make up videos. She's a professional make up artist in the US and she is fantastic for doing both everyday looks and super over the top looks. She is very open about her life and you can always see part of her life shine through in her videos. She shares a lot with her viewers and even takes us on shopping trips with her! She's a single mum and advocates making yourself feel good though her tutorials. She's of course a fantastic make up artist, but i also like to watch her when i'm just alone at home or anywhere. It kinda feels like i'm watching a friend :) The quality of her videos are also fantastic and she's fast with her tutorials!



So i could go on forever but these are the few artists i think are a MUST WATCH. I'll list a couple more you can check out. I'm sure most of you know most of them but for those of you who dont't, really do check them out. It will change your life. I know it changed mine!

A little about us :)

Hey guys,

So i just wanted to talk a bit about why we started this blog. Judy and I are best friends and although we have different interests, we both have a great passion for our interests. I am all about make up and beauty and Judy's all about food :) So, why be selfish! We want to share what we know with the world. 

We decided to put both our elements together because we think it could create good synergies. Its not just about looking after yourself on the outside, its about the inside too. Its about making yourself happy, on the inside and out.

We are super open to input from you guys. We are not experts. We do research and test things out and then share it with you :) So do let us know if there is anything in particular you'd like to see or anything you want to share. Email us at kimchiandbuttercup@gmail.com

what's in my friends make up bags #2

Make up bag #2, Fera




















1. Mesh Make Up Bag: She bought this from Watsons a long time ago! We went looking for it but we couldn't find it anymore :( Anyway mesh make up bag things are really easy to find! I bet Far East would have loads of them. The best part about it, you can see everything that's in your make up bag!

2. CRABTREE & EVELYN Rosewater Hand Therapy: Fragrant, light and moisturizing. She carries this around wherever she goes. It does have a very moisturized finish so if you want to moisturize your hands while doing work or if you're on your laptop, you might have to either wipe the excess off your hands or use a just tiny amount. Moisturizers are essential! Especially cause most of us are in an air conditioned environment most of the time! I think we often forget how dry the air in an air conditioned room is. Moisturize girls! (All CRABTREE & EVELYN stores)

3. Gatsby Oil Clear Sheet: Similar texture to the Johnson & Johnson (blue coloured) oil blotter. I'm not the biggest fan of this and i still think the more paper textured ones are better. Fasio has good blotters that are a more paper-y texture that do not have powder! I don't really recommend powdered blotters because you might not like the colour or the finish of the powder but if you've found a powdered oil blotter that works, thats great too! Do let me know if you know of any good ones! (Watsons, Robinsons, Guardian, John Little and most drugstores)

4. MAC Lipglass in Lust: Gorgeous :) Its the prettiest pink lipgloss ever. Its sort of brownish pink and it leaves a healthy sheen to your lips. The colour matches most skin types and its not shimmery so its good for everyday and to match every outfit! This gloss would also work well with nude lipsticks. (All MAC stores)

5. MAC Powerpoint Eye Pencil Permaplum: Her go-to eye liner for every day. Its a nice deep purple that would be a good replacement for a black eye pencil. Its deep coloured enough to fill in the lash line and yet not as intense as feline or smolder. I actually am a huge fan of coloured liners because they spice up your look without too much effort! I recommend just a nice coloured liner for days when you want a lighter look :)

6. Nivea Caregloss and Shine: Shimmery relatively nude lip gloss. Easy to carry around and its nourishing at the same time as its a gloss. (Watsons, Robinsons, Guardian and most drugstores)

7. Wet Tissues: This goes into my list of man's best inventions ever! Its great for wiping off any make up that has smudged throughout the day. I keep a whole box of wet wipes at my make up table. They are great in wiping out fallout from your eyeshadows without messing up the rest of your make up! (Babe wipes work really well!)

Chocolate Chip Cookies

Life without chocolate chip cookies is like swimming without water. You have to have it. It doesn't make sense not to. And I'm not talking about the store bought ones. I'm talking about the homebaked shizzles. The ones that comes out all warm and gooey, sinfully melting in your mouth until before you know it, you've wolfed down 5.

I'm gonna try making these with bread flour next time. Heard that it really helps to improve the chewiness and texture of the cookies. Will update you guys on the results. In the meantime...

Ingredients

125 grams butter
120 grams brown sugar
30 grams white sugar
1 egg
125 grams self-raising flour
2/3 cups chocolate chips (or more if you like)


Heat oven up to 180 degrees Celsius and position the rack in the middle. Melt butter in a double boiler. Once melted, combine with the sugars and blend until smooth. Add in the egg and blend again. Sift in the flour a few tablespoons at a time until fully incorporated. Fold in the chocolate chips. Drop by the tablespoons onto a baking tray line with baking paper. Space the dough out 1-1.5 inches. Bake for 15 to 18 minutes depending on how chewy or crisp you want it to be (the longer the crispier). Take out at let cool for 15 minutes before gobbling them up.

what's in my friends make up bags #1

Hello beautifuls :)

I was at Subway the other day and my girlfriend took her make up bag out so I was going through all her stuff and I thought, oh my gosh how fun :) So i decided to do a series of "what's in my friends make up bags" posts! It'll come in 4 parts and the last one will be my make up bag! :) I'll review some of the products and hopefully you get ideas for what to put in your make up bag!

Make up bag #1, Chermaine

1. Naraya Make Up Bag: I'm sure many of you are familiar with this :) Naraya is a Thai based company that produces fabric bags and all kinda of accessories. Thing i love about the bag is its structure (lots can go in) and that it has a mirror when you flip it open! (Bangkok?)

2. Anna Sui Lip Gloss 305: Cherm bought this awhile ago but still loves it. However she says sometimes (depending on what she's wearing) it can be a little too red but the texture is great and the shimmer is not too overwhelming. It gives her a nice healthy sheen to her lips. It's a nice light lip gloss in an easy-to-carry around plastic tube. (All Anna Sui stores)

3. Legere Water Drop Shiny Pearl BB Cream: Its oil free, water proof and sweat proof so based on what it claims, it seems to be the perfect kind of BB Cream for the Singapore weather. (about $40 John Little)

4. MAC Carbon (Matte) Eyeshadow: FANTASTIC. I think everyone needs to have one of these in their make up bags. Its a matte black eyeshadow and i love it because its blendable, buildable and matte. I get a bit skeptical about matte eyeshadows because i always worry if the pigmentation will be good. This is wonderful. She carries this around in case she needs a quick fix up for a night out :) (All MAC stores)

5. Maybelline Pure Mineral Blush C01 Gentle Pink: She just bought this a couple of weeks ago and is loving it. It was about $19.90 and it comes with a small brush. Its also great because she carries it around with her wherever she goes, but the blush powder does not spill out excessively from the bottom part of the container. She just makes sure its upright and there is no fuss when opening the container. (Watsons, Robinsons, Guardian and most drugstores)

6. MAC Splashproof Lash mascara Blacksplash: This is works relatively well for her. It gives a clean, lengthening finish. If you are concerned about length and need a good waterproof mascara, this will work for you. However, if you're looking for volume more than length, i'd say the MAC plush last would work better. I'm not the biggest fan of this mascara but it'll work if you want a clean look. (All MAC stores)

7. Urban Decay 24/7 Glide On Pencil Zero: She uses this for her lower waterline and uses a liquid liner for the top. This is FANTASTIC. Its creamy enough to blend or use as an eye shadow base but its also strong enough to use on your waterline. I have really teary eyes and nothing ever stays on my waterline but i'm kinda liking this pencil too. I carry it around with me and i find that i don't touch up my waterline as much as i do with my other black pencils. (Sephora)

Ok that's MAKE UP BAG #1! I think make up bags are something really personal and something you can have lots of fun with. The more i show you, the more you'll realise that people really carry very different things around depending on their personality and their lifestyle. Elaine's Apple Cinnamon Cake

Just a quick one cause I'm rushing for time. This cake has been in my family for a few years now. One of the best cakes ever (in my opinion anyway, but then again I am biased towards my mom). Oh and in case your wondering, Elaine's my mom. And no, I don't look like her at all. I lean more towards my Dad's side. Seriously. Just put a mustache on me and I turn into my Dad. Which is gross...

Wait what am I suppose to be talking about again? Ah yes... Elaine's Apple Cinnamon Cake. Right. Focus now. Deep focus:

Ingredients

125g butter, at room temperature
150g white sugar
3 eggs
250g self-raising flour
3-4 tablespoons milk
3 medium apples, cored and sliced
1 tablespoon ground cinnamon
1 cup walnuts, chopped

Warm oven to 180 degrees Celsius and butter a 10 inch round baking pan. Toss sliced apples with cinnamon and set aside.

Cream butter and sugar until smooth. Add in eggs one at a time, beating after each addition until well incorporated before adding the next.

Sift in the flour and fold. If batter is too thick, add in a few tablespoons of milk, until desired consistency. Pour into baking pan and arrange the cinnamon-sugared apples on the top. Sprinkle walnuts. Bake for 35-40 mins until a toothpick inserted into the center comes out clean. Allow to cool for 15 mins before eating.

Cooled? Alright you can dig in now.

NAIL TIPS :)

I wish i could "like" Judy's post! Blogger needs to incorporate aspects of FB in it (all future tech masters take note)

Ok well i admit that i have been super busy with school and all that jazz and i have not been looking after myself very well. So with that in mind and careful observation of the people in the train and in school everyday, i conclude:

BETTER NO NAIL POLISH THAN BAD NAIL POLISH.

I'm serious! Ok so a good nail polish lasts maybe, 8 days? That is if you watch what you do with your nails. For those of you who are into sports or maybe who are more active, i'd say the nail polish would last 5 days. After that, it of course starts to chip and stuff. And most of the time we think, oh no i don't have time to paint them again. Girls, take that one and a half minutes to remove your nail polish and leave your nails bare! I think sometimes we forget how nice our nails look like without any nail polish at all!

Cuticle oil and hand moisturizers are the way to go for keeping your bare nails looking pretty :) For your cuticle oil, you wanna look for something that has both vitamin e and jojoba. For a hand moisturizer, there are millions out there so choose one that has been working for you or one that is both a hand and nail cream.

Macadamia Nut Cookies

Its been pouring like mad the past few days. I wish the rain would stop. I hate going out of the house when it rains. And I hate how whenever I do go out, my shoes and clothes get all wet and squishy. I could walk around with the hugest umbrella ever and still get wet. The rain hates me. I'm quite certain of this.

Anyway... what did I want to say? Ah yes, macadamia nut cookies. These are love. Wanted to put in some white chocolate chips but it was raining (I hate you) and I didn't have any on hand, so I just made do with the macadamias.

Not that it mattered though. These cookies were great on their own. Even my mom liked them. And trust me - that woman can be a real critic when it comes to food.

Oh and instead of using plain flour, I used self-raising. And I know what you're thinking but trust me it works. It also helps with the 'spreading' problem which I've encountered in the past when baking cookies. Y'know... when the batter spreads out like crazy after about 5 minutes into baking and instead of individual cookies, you end up with one big clump. With these? No spreading problem. They do poof up quite a bit after 5 minutes but don't worry. Once they go past 15 minutes, that's when they really come into their own.

So anyway here's the recipe:

Ingredients

125 grams unsalted butter, at room temperature
Pinch of salt
90 grams brown sugar
60 grams white sugar
1 whole egg
180 grams self-raising flour
50 grams macadamia nuts, chopped

Heat oven up to 180 degrees Celsius and position rack in the middle. Cream the butter, salt and sugars together until smooth. Blend in the egg until well incorporated. Sift in the flour. Then fold in the macadamias. Drop by the tablespoon onto a baking sheet and separate each drop by about 1.5 inches. Bake for 16 to 18 minutes until golden brown. Cool for about 10 minutes before eating. Enjoy!
